This Baja shrimp salad recipe is budget-friendly, easy to make, and is absolutely delicious.
Prep: 15 min, plus chilling time.
1 lb. cooked shrimp, thawed and drained1 cucumber, peeled, seeded and thinly sliced12 radishes, thinly sliced4 scallions, sliced1/2 cup white wine vinegar1 Tbs. sugar
Combine all ingredients in a bowl and toss well. Chill.
