Spinach, Bacon, and Apple Salad

Prep: 15 min, Cook: 10 min.

  • 4 slices bacon
  • 1/3 cup sliced almonds
  • * 1 lb. spinach, washed, tough stems discarded, dried and torn into pieces
  • 1 large Jonathan or Macintosh apple, cored and chopped
  • 3 scallions, trimmed and thinly sliced
  • 1/4 cup fat-free vinaigrette dressing
  • 1 cup cool herb croutons

    Sauté bacon in a heavy nonstick skillet over medium high heat 5 minutes, turning once, until bacon is crisp. Transfer bacon to paper towels to drain. Crumble bacon and set aside. Discard all but 1 Tbs. bacon fat from skillet. Sauté almonds 3 minutes, shaking pan frequently, until lightly golden. Remove from heat. Combine spinach, bacon, apple, scallions and almonds in a salad bowl and toss. Pour dressing over salad and toss before serving with croutons.
