Low Fat Baja Shrimp Salad

Prep: 15 min, plus chilling time.

  • 1 lb. cooked shrimp, thawed and drained
  • 1 cucumber, peeled, seeded and thinly sliced
  • 12 radishes, thinly sliced
  • 4 scallions, sliced
  • 1/2 cup white wine vinegar
  • 1 Tbs. sugar

    Combine all ingredients in a bowl and toss well. Chill.

    Per serving: calories 181, fat 2.6g, 13% calories from fat, cholesterol 196mg, protein 27.7g, carbohydrates 11.4g, fiber 2.1g, sugar 8.0g, sodium 200mg, diet points 3.9.
